Our original Indian Chai recipe:
Ingredients for 1 litre:
1/4 l milk3/4 l water
2 tablespoons fresh ginger, finely grated
10-15 cardamom capsules, crushed in mortar
1 knife point Chai Masala spice mixture
Strong black tea (e.g. Lipton's PG Tips)
sugar or honey to taste
Preparation time: approx. 15 - 20 minutes
Preparation:
1) Bring the milk and water to the boil in a milk pot.
2) Add the fresh ginger
Caution; only add ginger when it is boiling, otherwise the milk may coagulate!
3) Add crushed cardomon and chai masala. Let everything simmer for 5-10 minutes.
4) Add 2 - 3 teaspoons of black tea and boil for 3 minutes at the highest heat.
5) Pour through a tea strainer.
This will give you the perfect Chai tea experience:
A good Chai should be enjoyed fresh, after only 1 hour in the thermos it no longer tastes very good. Traditionally, chai is drunk sweet - in India, chai is usually turned into a saturated sugar solution.
Ground cardamom quickly loses its aroma, so it is worth crushing the capsules fresh in a mortar. Chai is not for refined, subtle or flavoured teas - the best results are achieved with strong small-leaved teas "Dust Tea" or a strong breakfast blend (Assam or Ceylon).
